These are my new obsession for sure!
Ingredients:
- 2 sticks unsalted butter, room temp
- 1/2 c. brown sugar
- 1/2 c. sugar
- 2 large eggs
- 1 T. grated orange zest
- 1 tsp. vanilla
- 1 c. white chocolate chips
- 2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. ground ginger
- 1 tsp. kosher salt
- 2 T. cornstarch
- 1 c. Craisins
Cream butter and sugars together. Add in eggs one at a time. Beat for 1 minute. Add in orange zest and vanilla. Melt the white chocolate chips, stirring until smooth and totally melted. Add in melted white chocolate to the butter, sugar mixture and beat until incorporated. Combine all dry ingredients in a bowl and combine with chocolate/sugar mixture until just combined. Fold in Craisins.
Spread mixture into a greased 9×13 pan and bake @ 350 degrees until toothpick comes out clean, 25-30 minutes. Cool Completely.
Frosting:
- 4 oz of cream cheese
- 1 T. of butter
- 2 c. powdered sugar
- 1 pinch of salt
- 1 tsp. vanilla
- milk to thin, if needed
Cream together cream cheese and butter until smooth. Add in powdered sugar, salt and vanilla. Beat together pouring in a little milk to thin out, if needed.
To Serve:
Frost cooled bars then sprinkle more Craisins on top. I melt more white chocolate chips, then I drizzle chocolate diagonally onto the bars…you know, because they are not fully dressed without a drizzle 🙂
