Deer Valley Southwestern Chili

Ingredients

  • 1 1/2 cup green chilies

  • 1 cup red onion, diced

  • 1 cup celery, diced

  • 1 cup leeks, diced

  • 3 cloves of garlic, minced

  • 1/2 cup oregano

  • 1 1/2 lbs shredded turkey (or chicken)

  • 1 1/2 to 2 cups flour

  • 1 can creamed corn, blended to a puree

  • 1 can regular corn

  • 1 can black beans

  • 1 can kidney beans

  • 1 can garbanzo beans

  • 1/4 cup cumin

  • 3/8 cup chili powder

  • 3 T coriander

  • 1-2 T salt

  • 1-2 T pepper

  • 1-2 T sugar to taste

 Directions

  • Saute green chilies, red onion, celery, leeks, garlic and oregano in butter until soft.

  • Add 1 1/2 lbs shredded turkey then add flour and cook for a few minutes

  • Stir in 9 cups turkey (or chicken broth).

  • Add corn puree then 1 can of regular corn.  Add beans.

  • Season with cumin, chili powder, coriander, salt, pepper and sugar to taste.

  • Let simmer.

  • Serve with grated cheese, avocado and a spoonful of sour cream.
