Allie’s Baked Chicken Taquitos


  • Salt and pepper

  • 2 whole chicken breasts, cooked and shredded or chopped (You can use a rotisserie chicken to save time).

  • 1/2 cream cheese bar

  • 2 T fresh lime juice

  • 2/3 cup green salsa

  • 6 T chopped green onions

  • 1/2 tsp cumin

  • 1/4 tsp salt

  • 1 tsp chili powder

  • 1 pinch cayenne pepper

  • 1/2 tsp onion powder

  • 1/4 cup fresh cilantro

  • 1/2 cup cheddar cheese, shredded

  • 1/2 cup queso fresco cheese, crumbled

  • flour tortillas


  • Preheat oven to 425 degrees.

  • In a bowl, combine cream cheese, lime juice, green salsa, green onions, spices and cilantro.  Mix well.  Add shredded cheeses and chicken them mix again.

  • Heat up tortillas in microwave for 30 seconds.  Fill each tortilla with mixture and roll up tightly.  Place on cookie sheet with a cooking rack on top of sheet.  Lightly spray each side of the taquito with pam spray and sprinkle with salt.

  • Bake 10 minutes then flip over and bake another 10 minutes.

  • Serve with guacamole, salsa or sour cream.
