Allie’s Creamy Chicken Enchiladas

This family favorite recipe has served me well.  It helped me get started in creating a home cooked meal as a novice cook, as a new wife and even a new mom.  I cannot take the credit though, this is one of many that has been passed to me from my cooking hero, big sister Allie. ♥

 Ingredients

  • 4 cooked (shredded or cubed) chicken breasts

  • 2 cans cream of chicken soup

  • 1 small can of diced green chilies OR rotelle tomatoes

  • 1 small can of sliced olives

  • 1 pint sour cream

  • 3 green onions

  • 2 cups monterey jack cheese

  • 2 cups cheddar cheese

  • Tortillas

Directions

  • Combine onions, soup, chilies, olives, sour cream and jack cheese.

  • Remove 2 cups of mixture.

  • Add all but removed 2 cups to cooked chicken.

  • Roll mixture into tortillas and place in baking dish, spoon remaining 2 cups mix on top of tortillas and top with cheddar cheese.

  • Cover with foil and bake at 350 degrees F for 40-50 minutes.
