This is what you do with all those brown bananas…you’re welcome;)
1/2 c. butter
1 c. sugar
2 eggs
1 c. mashed bananas (i usually use 2)
1/4 c. milk
1 tsp. lemon juice
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
Cream butter and sugar together. Add eggs one at a time. Add milk, lemon juice and bananas. Sift dry ingredients in a separate bowl and then add to creamed mixture. Pour into greased muffin tins. Bake at 350 degrees for 10-20 mins or until toothpick comes out clean.
Frosting:
2-3 c. powdered sugar
1/2 c. butter
1/4 c. shortening
1 mashed banana
1 tsp. vanilla
Beat butter and shortening until creamy. Add in 1/2 of powdered sugar and the banana and vanilla. Continue adding powdered sugar until consistency is good. You can add a little milk to thin if necessary as well.
