Streusel Topping:
1/2 cup sugar
1/4 cup flour
1 teaspoon cinnamon
1/4 cup butter, softened
Mix all ingredients until crumbly. Set aside.
Muffins:
2 1/2 cups flour
2 cups sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup canned pumpkin pie mix (this has the spices mixed in)
1/2 cup oil
2 eggs, lightly beaten
2 cups peeled, grated apples
Preheat oven to 350 degrees. Grease 18 muffin cups or line with paper liners. Mix flour, sugar, baking soda and salt in a bowl and set aside. Beat pumpkin, oil, and eggs in a bowl with mixer until blended. Add flour mixture and mix until just moistened. Fold in apples and spoon batter into prepared pans and sprinkle with topping. Bake for 34 to 40 minutes (note: watch carefully, mine are always done after closer to 30 minutes) or until inserted toothpick comes out clean.
***The middles seem to sink a little on each muffin so I add a swirl of cream cheese frosting to each one***
