Roasted Butternut Squash

Trying to stay true to eating seasonally, here is another butternut squash recipe that is delicious.  I usually pair with chicken, some crusty bread, yummy white wine and we are good to go.  Simplicity is key with this recipe.

Ingredients

  • 1 butternut squash cut into 1″ cubes
  • 2 T olive oil
  • 2 cloves of garlic minced
  • garlic powder to taste
  • salt and pepper to taste

Directions

  • Preheat oven to 400 degrees F.
  • Toss butternut squash with olive oil and garlic in a large bowl. Season with salt,black pepper and a sprinkle of garlic powder. Arrange coated squash on a baking sheet.
