Trying to stay true to eating seasonally, here is another butternut squash recipe that is delicious. I usually pair with chicken, some crusty bread, yummy white wine and we are good to go. Simplicity is key with this recipe.
Ingredients
- 1 butternut squash cut into 1″ cubes
- 2 T olive oil
- 2 cloves of garlic minced
- garlic powder to taste
- salt and pepper to taste
Directions
- Preheat oven to 400 degrees F.
- Toss butternut squash with olive oil and garlic in a large bowl. Season with salt,black pepper and a sprinkle of garlic powder. Arrange coated squash on a baking sheet.
