I could literally make a wedding cake and not chocolate chip cookies for years. My family was dying for me to fix this problem. 😉 I think I finally did.
1 ½ sticks of unsalted butter
¾ c. brown sugar
¼ c. sugar
1 and ½ egg (just crack 1 egg into another small bowl and whisk up. Pour only ½ of this egg in)
1 t. vanilla
2 c. flour
1 3.5 oz instant vanilla pudding mix ( NOT sugar free or cook & serve)
1 t. baking soda
Pinch of salt
¾ to full bag of chocolate chips of choice
In an electric mixer, combine sugars and butter. Mix until creamy. Add in eggs and vanilla. Mix well.
Scrape down sides of bowl and add in flour, pudding mix, baking soda and salt. Mix until just combined.
Add in chocolate chips.
I use a large ice cream scoop to scoop dough onto a greased cookie sheet. Do NOT flatten out.
PUT COOKIES ON SHEETS INTO THE FRIDGE FOR 15 MINUTES (VERY IMPORTANT STEP).
Pre-heat oven to 350 degrees.
Bake cookies for 11 minutes. Remove to a cooling rack 1 to 2 minutes after removing from oven.
The cookies will seem under cooked but just let them rest and they will be perfect.
